FLAT BREADS & LAVOSH


Rustic Bakery Artisan flat breads and lavosh are made entirely by hand in small batches in Marin County, California. We use a natural wild yeast starter to leaven our breads which is the respected and traditional age old method of bread baking.


Rustic Bakery uses only the finest organic flours and grains from Giusto's Mills in San Francisco and we use local organic farms to supply our cream, onions and mushrooms. All of our flavors are made with real, fresh ingredients, we caramelize our sweet onions, slice and saute our mushrooms, pit and mince our organic olives, grind fresh tellicherry peppercorns and make our own crème fraiche using Straus Dairy organic cream.


We believe making our product in this manner makes it more healthful, delicious and beneficial to the community and the planet.


All of our flavors have a suggested cheese pairing on the back label making it a wonderful addition to any cheese counter selection.

 

     OUR FLAVORS:


*Original 2 seed Lavosh – This is our first product. It is a sourdough lavosh sprinkled with white and black sesame seeds. Its mild slightly sweet flavor compliments strong flavored cheese, Epoisses, Cow Girl Creamery Red Hawk or Affine des Chablis would be a delicious pairing.

 

*Whole Grain Lavosh – A wonderful mix of 5 whole grains and flax seeds, this is a healthy and delicious compliment to hard cheese, Aged Gouda, Sonoma Dry Jack or Neal”s Yard Cheddar are a perfect match.

 

Rosemary & Olive Oil Flatbread - This flat bread combines the classic flavors Medditerean, rosemary and olive oil.The sweet fresh rosemary leaves are kneaded into the dough giving this flat bread its unique aroma.Recommended cheese pairings are creamy riccotta, Asiago or Teleme.

 

*Olive Oil & Sel Gris Flat Bread – Our most neutral flavor, it compliments all cheese and spreads and is a great palate cleanser in a cheese tasting or for a winery tasting room. Using grey sea salt from France, this flat bread has trace minerals we need found only in natural sea salt. Excellent compliment to Point Reyes Blue Cheese or Bleu D'Auvergne.

 

*Sweet Onion & Crème Fraiche Our most popular flavor, the sweet organic onions are mellowed by careful roasting in our ovens. Using Strauss Dairy cream to make our crème fraiche contributes to the wonderful taste of this flavor. Fantastic pairings include: Triple cream cheese such as Brillat Savarin or Cowgirl Creamery Mt. Tam, cave aged Gruyere or Emmantel or the wonderful Italian 3 milk cheese, Rochetta.

 

*Kalamata Olive Flat bread- This delicious flat bread is made using Divina organic olives which we hand pit and mince to knead into the bread. The result is a true olive flavor which compliments Redwood Hill fresh Chevre, Humbolt Fog or creamy Cresenza.

 

*Pepper Polenta – A mildly spicy flat bread using the finest Tellicherry peppercorns and organic polenta, this flavor is great with mild and creamy cheese. Pair with St. Andre, Affinois, or Explorateur.

 

*Wild Mushroom & White TruffleThis special flat bread combines the earthy elements of wild mushrooms and white truffles. The aroma suggests a pairing with Fromage Blanc, Teleme or a rich Tomme.

 

PAN FORTE CROSTINI         

Pan forte crostini are made using 100% whole wheat flour, no added fat and are sweetened with agave nectar. The abundance of dried fruits, nuts & seeds make them a high fiber, high protein, slightly sweet flat bread and a delicious partner for cheese or wonderful alone as a healthy snack.

 

*Hazelnut & Sultana -This flavor is chock full of organic hazelnuts and sweet plump golden raisins. While it is a fabulous accompaniment to cheese, it is a delightful slightly sweet and crunchy snack on its own.
Recommended cheese pairing - Brie, Camenbert or Blue vein cheese.

 

*Cranberry, Rosemary & Pecan -Three different flavors combine in this Pan Forte with thee note of fresh rosemary coming through.This flavor is nutty and sweet with the added twist of herbal in the mix. Delightful on its own, with a glass of wine, or, paired with cheese.

Recommended cheese pairing - creamy fromage blanc or fresh crescenza.

 

*Walnut & 3 Seed- The rich taste of walnuts combine with sunflower, pumpkin and sesame seeds to create a crostini that has a light and crunchy texture. Great with all cheese and spreads, or, a high fiber snack.

Recommended cheese pairing- Dry Jack, Gruyere or Aged gouda.

 

*Cherry, Cacao Nib & Almond - This crostini has a subtle chocolate flavor from the cocao nibs, combined in a classic way with tart dried cherries and natural almonds. Sprinkled with crystal sugar before baking, this crostini is delicious with many cheeses or, as a healthy cookie like dessert.

Recommended cheese pairing - Teleme, Chevre or Cambozola.
